Chiefs for a Week: Apprentices as chefs for BRIX and SPIGA at the Seedamm Center
The restaurants SPIGA Ristorante and BRIX Burger & Salad in the Seedamm-Center in Pfäffikon (SZ) will be managed by 28 apprentices of the SV Group as of today, 25.9.2023. With the project week "Chiefs for a Week", the SV Group ensures a varied training of the industry's junior staff and enables its apprentices to take on responsibility and to deepen acquired knowledge in practice. The project week is taking place for the ninth time this year.
Training and further education are the best recipe for counteracting the shortage of skilled workers in the catering and hotel industry. As the leading gastronomy and hotel management group in Switzerland, the SV Group has been investing in the training of competent young talent for years.
Chiefs for a Week: Apprentices run a restaurant for a week
The "Chiefs for a Week" apprentice project, which has taken place annually since 2013, is an example of what contemporary and versatile training can look like. This is because during the project week, SV apprentices take on sole responsibility for a restaurant and thus gain an insight into what working life will be like later on. "What's new this year is that our apprentices are taking over two restaurants in the public gastronomy sector," knows Christina Kern, project manager Chiefs for a Week at SV Group. "Our apprenticeships are mostly employee restaurants and dining halls. In a public restaurant, the processes are different. This means an additional and exciting challenge for our Chiefs, allowing them to deepen their knowledge in this area of gastronomy as well." 12 cooks, two hotel communication specialists, ten system catering specialists, one restaurant specialist and three commercial specialists make up the "Chiefs" team this year.
Italian Culinary and American Street Food
Preparations for the project week have been underway since mid-March. From staff planning to marketing activities to the menu, the learners have full responsibility. For the project week, the "Chiefs" have developed an extended special offer for BRIX and SPIGA in recent months and given free rein to their culinary ideas. For example, a double-decker "Chiefs" burger with cheese, caramelized onions and black bun is on offer at BRIX during the project week. In addition, donuts with various fillings will be served. For the additional offer at SPIGA, the learners have put together special "Chiefs" pizza and pasta.
The SV Group's "Chiefs for a Week" project week offers apprentices the opportunity to take on responsibility and thus gain an insight into the business management of a restaurant. During the week, the apprentices are accompanied by experienced coaches from different areas of the SV Group. With the project week, the SV Group optimally prepares its apprentices for the start of their careers after their apprenticeship and provides exciting training for the next generation of managers in the industry.
